4 Easy Ways to Cook Eggs while Camping this Summer 2018

 

Nothing says summertime like good old fashion camp cookery. We’re ready to let out our RV awning at the nearest campground and enjoy some family bonding over delicious outdoor meals. Today we bring you our top four, easy egg dishes for your early morning meals (and for those of you who like breakfast for dinner). Did we miss your staple egg dish? Delicious Thai Omlette Recipe

Thai Omelet
Thai omelets are a classic. Not only are they divine, the dish is a three ingredient, 10 minute process. Here’s how to do it.

Ingredients: 
Eggs
White rice
Fish sauce
Sesame seeds (optional)

What You’ll Need:
Rice Cooker
Stove
Pan
Bowl
Olive oil

Steps:
1. Cook one cup of rice in rice cooker.
2. Whisk three eggs in bowl. Add fish sauce to taste.
3. Heat pan. Add olive oil.
4. Pour whisked eggs into pan. Let cook until golden brown.
5. Flip omelet and cook on the other side until golden brown.
6. Place rice in a bowl, top with egg omelet. Add sesame seeds for extra flavor.

 

Breakfast Tacos with Hashbrowns and Jalepenos

Scrambled Egg and Hash Brown Tacos
Who doesn’t love breakfast tacos, am I right? These hearty tacos are a classic for everyone and the best part is, you can add whatever toppings you want!

Ingredients: 
Eggs
Tortillas
Dehydrated hash browns
Jalapeno
Onion
Optional toppings: avocado, hot sauce, black beans, cilantro

What You’ll Need:
Stove
Pan
Pot
Water
Olive oil
Bowl

Steps:
1. Soak dehydrated hash browns in water for a few minutes.
2. Heat pot and add a small amount of olive oil.
3. Crisp hash browns until golden brown.
4. Whisk eggs together in small bowl, then heat pan with a few drops of olive oil.
5. Pour eggs onto pan and get to scrambling!
6. Warm tortillas on each side for 10 seconds.
7. Assemble your tacos and devour!

Toast with Farm Fresh Fried Egg
Fried egg toast is arguably the most delicious breakfast classic. You just need bread, eggs and an appetite.

Ingredients: 
Egg
Toast
Optional toppings: hot sauce, avocado

What You’ll Need:
Pan
Toaster oven
Olive oil

Steps:
1. Heat pan and add olive oil. Fry egg and set aside.
2. Toast bread in toaster oven.
3. Add egg to toast. Top with Frank’s hot sauce, if you’re feeling spicy, or any other ingredient you have in your RV.

 

Sweet Potato Black Bean Breakfast Bowl

Sweet Potato and Black Bean Breakfast Bowl
We got this recipe from our favorite farmer, Andrea Bemis, the brainchild behind the best selling cookbook, Dishing Up the Dirt. Her breakfast bowls are easy and scrumptious!

Ingredients: 
Sweet Potato
Black Beans
Cooked quinoa
Red Onion
Corn
Avocado
Eggs
Jalapeno

What You’ll Need:
Oven
Olive Oil
Baking sheet
Bowl

Steps: 
1. Preheat oven to 425F.
2. Toss sweet potato with oil and place on baking sheet. Roast for 15-20 minutes (until lightly brown.)
3. In your pan, fry two eggs and set aside.
3. Add cooked quinoa and sweet potatoes to each bowl and toppings to your liking!
4. Place fried egg on top and enjoy!
